3 cups water
1 cup milk or alternative milk
1 bar chocolate (Ibarra)
/ Add ingredients to a pot and bring to a boil. Let boil until chocolate dissolves and let cool.
1.5 oz Ilegal Joven or Reposado
0.5 oz Ancho chili liqueur
2 oz hot chocolate mix
0.5 oz agave nectar
1 dash Angostura bitters
/ To coffee mug: add Ilegal Mezcal, agave, chili liqueur and bitters, fill with chocolate mix and garnish with cinnamon stick.
2 oz Ilegal Mezcal Joven
2 slices of Poblano pepper
1 oz lime juice
0.5 oz agave nectar
Chipotle salt:
3 tsp chipotle en adobo purée
1 cup kosher salt
/ Mix Chipotle salt ingredients together and let dry.
Add ingredients to shaker and shake. Strain into stemmed glass with chipotle salt rim. Garnish with a Poblano slice.

0.5 oz lime
/ Rim glass of cantarito with sal de gusano and ingredients and ice. Top off with grapefruit soda and a pinch of sal de gusano (worm salt)

0.75 cups Ilegal Joven
1 sprinkle Tajín
– Add orange juice to a pot and bring to boil
– Add packet of unflavored gelatin and stir until dissolved
– Add Ilegal Mezcal Joven
– Let cool
– Pour into shot glasses and add tajín
– Refrigerate

/ Remove 1.5 oz from a bottle of soda water and replace with Ilegal Mezcal. Garnish with a grapefruit twist or slice.

0.75oz Orgeat Simple Syrup
5 Berries of Choice
6 Drops Angostura Bitters
*Orgeat syrup is made from almonds, sugar, and floral water. Available at most liquor stores.
Put all ingredients into rocks glass. Muddle and fill with crushed ice, shake. Add 6 drops Angostura bitters.

0.5oz Maple Syrup
5 Dashes Angostura bitters
Add all ingredients in mixing glass.
Stir with ice until chilled. Serve in a rocks glass over ice. Garnish with citrus.

0.5oz Fresh Lime
4oz Tonic
Rim a tall glass with salt or add a pinch to the cocktail. Build in glass. Garnish with a grapefruit peel.
